In this study, willow leaves were dried at 35, 45 and 55 ºC in a temperature controlled dryer. The initial moisture content of the material was dried to a final moisture range of 10-15%. In the study, it was observed that drying temperature values had a significant effect (p <0.05) on the color and chlorophyll values of willow leaves. When the dried samples were compared with respect to their color values (p <0.05), the most suitable drying process was determined at 45 C in a temperature-controlled microwave dryer. In terms of chlorophyll content (SPAD), it was determined statistically (p <0.05) that drying temperatures had no significant effect.
